When talking about skin health, you may think of collagen. What is collagen and how it works?

 

What is collagen

Collagen is synthesized from procollagen with fibroblasts and other cells. There are more than 16 different types of collagen in the human body while there are only 3 major types.

Type 1 is the most abundant one and it acts like glue to hold tissue together, to form bones and to give skin the elasticity.

Type 2 collagen is found in connective tissues with its major function to build cartilage and prevent age-associated joint pain.

Type 3 collagen includes a major component of the extracellular matrix of our organs and skin. Apart from providing elasticity to the skin with Type I collagen, it forms blood vessels and tissues within the heart.

 

The benefits of collagen

In conjunction with the functions of collagen, it provides different health benefits and only a few major ones are mentioned here.

1. Skin and hair health

Looser skin, less elastic skin and more wrinkles are some of the signs of aging. You may have noticed the physical difference in skin from your own or others’ experience like your grandparents. It is a natural process because of the decrease in collagen production with age.
Knowing that lack of collagen is the major culprit of aging, increasing the intake of collagen may give us hope.

2. Joint health

Because of the loss of collagen in cartilage, the gel-like substances between bones, there is less protection to the joints and less lubricating effect for movement facilitation.

Serving: 2

1 small Beetroot

1 large apple

8 strawberries (medium)/ 25 blueberries/ 20 blackberries

 

 

Golden collagen juice (yellow)

Serving: 2

1 medium mango

1/2 inch peeled, fresh ginger root

1 tpc of turmeric powder

1/2 tpc. cinnamon

 

 

Green collagen juice (green)

Serving: 2

1 medium green apple

1/2 bunch of celery

2-3 lemons or limes, peeled and chopped

2 medium-sized cucumbers, roughly chopped

Who dosen’t love pie, especially a healthy homemade version? Check out this festive pumpkin pie recipe, just in time for your visiting Halloween ghosts and goblins!

Serves 8 (makes a 9-inch Pie)

Ingredients

Pie Crust:
1 cup raw walnut halves
1 cup raw pecan nuts
1 tbsp maple syrup
3 tbsp of coconut oil, melted
3 tbsp buckwheat flour

Pumpkin Pie filling:
2 cups homemade pureed pumpkin
3 eggs + 1 egg yolk, lightly beaten
1 tsp ground nutmeg
1 tsp ground cinnamon
1 tsp ground cloves
½ tsp fresh ginger, grated
2 tbsp raw honey
2 tbsp maple syrup
½ cup almond or rice milk

Directions

1. Preheat the oven to 175C/350F.
2. Place the walnuts and pecan nuts in a food processor and process until coarsely ground. Add the maple syrup, coconut oil and buckwheat flour and pulse until the mixture is well combined and comes together to form a crumble.
3. Place the mixture into a greased 9-inch pie pan and press the crust into the bottom and sides of the pie pan. Pierce the base of the crust with a fork, every ½ inch or so to prevent the crust from rising up as it cooks.
4. Bake for 10-15 minutes, or until the crust is just starting to brown. Remove from the oven and leave to cool for about 5 minutes.
5. While the crust is baking prepare the pie filling. Add all the ingredients together in a large bowl and mix until well combined.
6. Pour the filling into the prepared pie crust and smooth the filling out evenly with a spatula. Bake for 40-45 minutes, or until the filling has set and the crust is nicely browned.
7. Leave to cool slightly on a wire rack and serve warm or at room temperature.

VEGAN RECIPE: Roasted cauliflower with cumin, coriander & almonds

The cauliflower. A very underrated vegetable, but one that should not be overlooked. For one thing, its readily available year round – supermarket, local markets – your trusty cauliflower will be there. Ready for the taking. On another note, its cheap! This vegetable has a plethora of ways you can cook, blanch, steam, roast, process or mash! You will also be pleased to know that it contains an impressive array of nutrients including vitamins, minerals and antioxidants!

SERVES: 4

COOKING TIME: 25 Minutes

INGREDIENTS:

head of cauliflower, broken into florets

Sea Salt

Olive Oil

1 knob butter

2 Teaspoons cumin seeds

2 teaspoons coriander seeds

1-2 dried red chillies

1 handful blanched almonds, smashed

zest and juice of 1 lemon

METHOD:

Preheat oven to 200 degrees Celsius. Blanch cauliflower in salted boiling water for a couple of minutes then drain in a colander, allowing it to steam dry (you don’t want any water left in cauliflower or it wont roast properly). Toss it in a good lug of olive oil and the butter. In a pestle and mortar, bash your spices and chillies with a pinch of salt, then mix with your almonds and put in a hot dry ovenproof pan to slowly toast them. After a couple of minutes, add the cauliflower. When it gets a nice bit of colour on it, add the lemon zest and juice and mix around well. Fry for about a minute longer then pop the pan into the preheated oven for about 15 minutes to crisp up.
